On your trips through towns and cities, how often have you wanted to learn about the traditional local cuisine? In Santa Fe de la Laguna, you will be able to learn the secrets of Pátzcuaro Lake cooking from well-known Purépecha cooks. Here people fish, cultivate cornfields and raise turkeys. They use grinding stones to prepare their food, blend their sauces in mortars and pestles and cook on griddles. Here earthenware pots rule the kitchens.

Santa Fe de la Laguna was the first hospital town in Michoacan and is part of the Don Vasco Route. You will be given a pot, a symbol of welcome in this community of potters, before going in to the kitchen. You are entering the intimate world of Purépecha communities. Take advantage of the luxury of being with these great cooks and participate, learn, question, test and above all savor the moment. Would you dare to make tortillas on the griddle?

Let’s have a meal with them. We start with corn kernels with lemon and chile or fried silversides. This is followed by Pátzcuaro whitefish with tomato sauce, a type of beef broth called churipo with traditional corundas, corn tamales wrapped in corn leaf. Perhaps rabbit in mole, a spicy, chocolaty sauce. Or uchepos, tender corn tamales.

While we eat, these women explain that cooking is an act of love towards their families. They use fresh, natural ingredients. Then they add their special seasoning. Eating is all about sharing, community and family. These cooks contributed to traditional Mexican cuisine being declared Intangible Cultural Heritage of Humanity.
