In 2010, UNESCO recognized Michoacan as the “ground zero” of mexican cuisine. From that moment, the love for the area, its products and ancient techniques. Villa Montaña Hotel & Spa honors this knowledge and provides a new menu, made by the chef Manuel Gomez, who supports the food of the lacustrine area and the purepechan plateau.  

In an act of recognition and fascination, the chef Manuel Gomez has conceived a menu of michoacan roots with new global trends. Ingredients and dishes from Michoacan that change the worldwide gastronomical experiences. A luxury at each bite. Ideal to taste as meal or dinner. 


  • Sampler michoacan menu of four dishes, composed of:
  • Snacks
    • Carpaccio of trout-salmon with morelian gaspacho as garnish.
    • Uchepo capuccino with Cuitlacoche foam.
  • Main dish
    • Chicken breast wrapped in saint leafs, stuffed with capon chili, requeson and black chili sauce.
  • Desert
    • Strudell with ate, cheese and paste ice cream.
  • An artisan mezcal as appetizer.
