Ingredients

5 kilograms of pork lard
5 kilograms of mix pork meat
Juice from 2 oranges
3 apples, chopped
½ liter of milk
Nitro salt to the taste
3 liters of water
3 bunches of thyme
3 laurel leaves

How to

Put the lard on a pot, better if it is of copper and big sized. Add the orange juice. Heat the pot and add the apples. A few minutes later, add the water and the milk until it boils. Once the mix boils, add salt, thyme and laurel leaves. Let it boil for some minutes and remove the herbs. Add the pork, first the more thick parts and later the tenderer, like buche or nana.

Suggestions

Serve the carnitas in tacos, accompanied by coriander, guacamole and sauce to increase flavor.
