General ingredients:
3 kilogram of corn dough
3 liter of oil
Telera bread

2 kilogram of beef scruff, chopped
Juice of 1 kilogram of lemons
3 kilogram of tomato, washed, clean and chopped
1 kilogram of onion, chopped
1/2 kilogram of manzano pepper, washed and chopped
1 can of chilies in slices (250 grams)
Salt to the taste

200 g of guajillo chili, big and soaked in boiling water

3 cloves of garlic
Salt to the taste

And finally:
3 cups of fried beans
1 small cabbage, chopped thinly

How to

Prepare 30 tortillas with the dough, fry them in oil until they become toasted and browned. Drain them in absorbent paper to remove extra fat. Spread the fried beans, put the cooked meat on top and add the cabbage and guajillo sauce to the taste.

Then, put the tostadas in the telera bread cut in half: that is the popular way of Santa Clara del Cobre.

Preparation of the meat:
Put the meat in a recipient and bath it with lemon juice. Let it rest until the meat turns white. Then add the tomato, onion, chili, pepper and salt to the taste.

Preparation of the sauce:
Mill the chilies with the garlic cloves and the salt.


Accompany with fresh water. Depending on your particular taste, you can add more guajillo chili of cabbage.
